Homemade Crème Fraîche with Berries


This will be a quick little post with a very easy recipe for some homemade Crème Fraîche (Fresh Cream). If you have never had Crème Fraîche before do yourself a favor and try this out. Think of it like a richer sour cream with a really nice mouth feel. You can buy Crème Fraîche from certain super markets or speciality food stores but it is so easy to make at home and not mention much cheaper as well. If you want you can use it in place of sour cream for just about anything and the outcome will be that much better. It is especially good in sauces where sour cream is called for as it will not break down like sour cream when heated due to the higher butter fat content that is in it. And as seen here it is also good with deserts, either plain or lightly sweetened with some powdered sugar and whipped up. Take note that when whipping it the Crème Fraîche will not form really stiff peaks like plain heavy cream will. As always try and use the highest quality ingredients you can get and afford.

Ingredients
1 Cup Heavy Whipping Cream
1 Tbsp Cultured Buttermilk

Method
1. In a glass jar with a lid combine the cream and buttermilk and shake well (little tip for a nice jar, when you are done with any store bought speghetti sauce those work really well for this)
2. Remove lid from the jar and place a paper towel or a dish towel over the lid and secure it with a rubber band
3. Set the jar in a warm place and let it sit for 12-24 hours. If you have a cold house just find a nice warm spot to put the jar
4. After it has sat stir the Crème Fraîche, which should now be thick, place lid on the jar and chill in the fridge for a day
5. Come up with uses for it and enjoy!
